Making Home-Style Taco Salad Tostadas

A few months ago, I was testing a taco salad recipe and visited my local grocery store for a tostada shell. I unfortunately only found one variety and to be honest, it tasted awful!

With a few tortillas in the pantry, I decided to try making my own! After a quick scan through the Internet I came upon a blog that simply placed ramekins upside down on a baking sheet, sprayed them with cooking spray and placed a tortilla on top. Gravity pulled the tortilla edges down toward the pan creating the sides and the ramekin molded the bowl shape. BINGO! I placed them in the 400ºF oven like the directions stated and after a few minutes, they were crispy and ready to go! They did look a little rustic but then again, there is something truly special about a “organic” and “rustic” looking tostada.  It was fantastic and I will absolutely do it again!

When it's Done it's Done!

Are we there yet? I’m hungry, is dinner ready? How much longer till dinner? Sound familiar?

To this day, I can honestly say that I have been victim of such questions, especially when I am back home in Seattle with my family. In culinary school, we all fell victim to asking the Chef, “how long will xyz take” to which they would respond, “it’s done when it’s done.” Yes Chef, end of story!!! I was one of those students so I am not here to ridicule or make fun as quite frankly, we all do it! Pressed for time with hungry kids or friends asking the same question, it’s hard not to.

I invite you to venture away from that mindset and to really enjoy the process. By taking that question out of your head, you immediately take a load off your back and can relax without the stress of hungry guests salivating around you. I know you are probably thinking “that’s not realistic” but it absolutely is if you start your week with a plan! Look at your calendar, determine what nights you have a little extra time and which nights you do not. Figure out when you have time to shop and how you can maximize a week’s worth of meals with one visit to the grocery store. With planning and forecasting, cooking can be rewarding, delicious, nutritious and on the table in no time!

Sunday Supper Recommendation: Peach Cobbler

For Sunday supper tomorrow, try finishing your backyard get-together with a sweet Peach Cobbler! Nothing is more satisfying than fresh juicy peaches paired with a crumbly buttery crust. Don’t forget the ice cream for a perfect finishing touch!

This weekend I am heading back to the kitchen of a local cooking store where I teach cooking classes. Given I have been in Seattle most of the summer, due to a family emergency, I am thrilled my family is healthy and that I am back to the classroom!

Marking Recipes

When cooking from recipes, I always recommend having a pen on standby! This way as you work through the recipe, you can make edits or write notes making your second attempt that much easier! In addition, if you make any adjustments that either work really well, or not at all, you know how to adjust for next time! There is nothing worse than making an incredible dish and forgetting the portions of each ingredient and method.

After all, recipes are simply roadmaps offering directions with the intention you will find and take your own route. Making notes on the margins is one way to help re-route your “trip” and find your way home.
