Don’t Slice Your Steak to Check for Doneness:
First bit of advice, don’t slice into your meat to see if it is done! By doing this, all those delicious juices (juices = flavor) you worked so hard to build during the cooking process, come streaming out like a spilt can of coca cola.
Do purchase a Meat Thermometer:
The best way to test the doneness of your protein, is to invest in a meat thermometer that has been accurately calibrated. Your local cooking store, like Sur La Table, or even most major grocery stores, have options from which you can choose from.
