Handling a Microplane
With the dozens of cooking classes I have taught, I am always surprised at people’s interpretation of the device. From the way they grip the handle to how they hold the ingredient, some work and some, well, let’s say could use some adjusting.
Here is a quick and efficient way to easily grate cheese, nuts, lemons, ginger and really whatever task is at hand.
I am right handed, so if you are left handed, switch hands. Place your thumb on the lemon and press the lemon away from you as you press and pull the microplane toward you. Work from top to bottom in smooth strokes and press only hard enough to remove the top layer trying to not grate the pith (which is bitter). Repeat this process working your way around the entire lemon. If done correctly, one way around removes all the zest.
Now, simply tip the microplane upside down over whatever it is you are making and waste is minimal and cleanup nonexistent!
