Tuesday's Tip of the Day: Quickly Bringing Eggs to Room Temperature
When a recipe asks for room temperature eggs and time is of the essence, add them to a small bowl of room temperature to luke warm water and slowly bring them to temp. By doing so gradually, you raise the temperature of the eggs in a safe manner. Ideally, if you know the recipe calls for room temperature eggs, leave them out overnight. In fact, in Australia they sell eggs at room temperature right next to the bread. I’m not saying you should start storing your eggs at room temperature on a daily basis, but I am putting this concept into perspective.
