Tuesday's Tip of the Day: Picking Parsley
I have yet to meet someone that likes picking parsley. One leaf at a time, it’s a tedious process but one that needs to be done to prevent bitterness from the stems. My friend, Chef Mac, once taught me an excellent trick for picking parsley, and picking it quickly! From now on, I am a parsley-picking-wiz and actually look forward to it!
This works best with a medium to large bundle of fresh parsley so there is more to work with. Take a dinner fork and literally rake the teeth end through the leaves while holding the stems. Leaves will catch in the teeth of the fork as they pull from the stem. All you are left with are stems, which you discard, and perfectly picked parsley.
Now how is that for easy?
