Fingerling Potatoes | Wednesday’s In the Know
You may wonder where the name comes from, but one look at a fingerling potato–like these beauties from Melissa’s Produce pictured above–usually gives a good indication. Fingerling potatoes, however unusual the name and sight, may seem mysterious, but they are quite delicious with their smooth creamy texture. And, they don’t require peeling so put down those peelers and read on….
Perfect accompaniment as a roasted side–especially when first tossed with olive oil and fresh herbs like rosemary and thyme–and even boiled and served in a salad. However you choose to enjoy your fingerling potatoes, I hope that you give them a try. You never know, these could become a family favorite and find a place in the weekly menu rotation.
