Pineapple Coconut Icey
Nothing takes me to the tropics faster than a delicious tropical inspired icey. The key here is using the best coconut gelato you can get your hands on, Talenti being my all-time favorite! For an adult version, consider adding a splash of tropical flavored rum and enjoy! Please drink responsibly!

2 cups frozen pineapple chunks
1/2 cup coconut gelato, like Talenti
1/2 cup coconut water, plus more if thinner consistency is desired
1 tablespoon fresh lime juice
Method:
1. In a blender, like my personal favorite Vitamix, add pineapple, coconut gelato, coconut water and lime juice. Secure the lid and blend until smooth. Serve as is or with a fresh pineapple wedge to garnish.
Kitchen Note: Using frozen fruit keeps the smoothie from watering down impacting ultimate flavor all the way to the last sip!
