Chocolate Peanut Butter No-Bakes
A few years ago, a co-worker put in a request for no-bake cookies for their birthday. Given how I am always up for a challenge, I went online and started researching what a no-bake cookie was all about. I tried countless recipes finally settling on this one. Whether you are baking for a birthday or just because, these are a real winner!

Preparation time: 15 minutes
Cook Time: 4 minutes + 1 hour refrigeration
1 1/2 cups granulated sugar
3 tablespoons cocoa powder, best quality possible
1 stick (1/2 cup) unsalted butter, melted
1/4 cup whole or low-fat milk, room temperature
3/4 cup creamy peanut butter
1 tablespoon pure vanilla extract
2 1/2 cups old-fashioned oats
Method:
1. In a medium size saucepan over medium heat, add sugar, cocoa powder, butter, milk, peanut butter, and vanilla. While stirring, allow to cook until smooth and evenly combined, approximately 2 – 4 minutes.
2. Remove from heat, add oats and stir to combine.
3. On parchment lined baking sheets, use a tablespoon to evenly portion dough into 2 tablespoon size portions.
4. Place in the refrigerator until cold and firm, at least 1 hour.
Kitchen Note: If time is of the essence, place the baking sheet in the freezer before adding the cookies on top.
