Sweet Onion Marmalade
Come summertime, I am always looking for ways to take my condiments to the next level. This quick and easy marmalade recipe is absolutely delicious and a constant request at every summertime BBQ!
Yield: 1/2 cup

Preparation time: 15 minutes
Cook Time: 7 minutes
1 tablespoon olive oil
1 tablespoon unsalted butter
1 sweet yellow onion, thinly sliced
1/4 cup dry white wine, like sauvignon blanc
1 tablespoon light brown sugar
Method:
1. In a medium size skillet or Dutch oven, add olive oil and butter and allow to heat and the butter melts, approximately 1 – 2 minutes. Add onions and cook while stirring until soft and lightly colored, approximately 4 – 6 minutes.
2. Add white wine and using a wooden spoon, scrape the bottom to deglaze the pan. Once dry, add brown sugar and continue to cook while stirring until soft and caramelized, approximately 30 seconds – 1 minute.
3. Remove from heat and allow to cool before use.
4. Best served as a condiment at your next summertime BBQ!
Kitchen Note: Consider swapping out white onion for red, and white wine for red wine for a different variation and color profile.
