Roasted Tomatoes on the Vine
There is nothing simpler and more show-stopping than perfectly roasted tomatoes on the vine. Simple as that may sound, it’s a synch to make and will no doubt lead your guests in several rounds of “Oohh’s and Aahh’s.”
Yield: 5 servings
Oven: 425ºF
Preparation time: 5 minutes
Cook Time: 1 hour 45 minutes
5 medium size tomatoes on the vine
extra-virgin olive oil to generously coat tomatoes
Maldon or kosher salt, to garnish
Method:
1. Preheat oven to 425ºF.
2. On a baking sheet lined with foil, generously rub the tomatoes with olive oil and place in preheated 425ºF oven.
3. Allow to roast until charred and bubbling, approximately 1 hour and 45 minutes.
4. Remove from oven and carefully transfer for a serving platter. Finish with maldon or kosher salt and serve either hot or room temperature.
5. To serve, use kitchen scissors to release each tomato from the vine. Serve each guest one tomato with a portion of the vine attached and a fork and knife for service.
Kitchen Note: Tomatoes on the vine can be found in several sizes and both red and yellow variety. This method applies to all shapes and sizes so feel free to play around with the variety of tomatoes, being mindful that cooking times may vary.
