Maple Roasted Carrots
Method:
1. Preheat oven to 425ºF.
2. In a small bowl, add olive oil, maple syrup, salt and pepper whisking to combine.
3. Using your hands, generously coat the carrots in olive oil and maple syrup mixture and place in a single layer on a baking sheet lined with parchment paper.
4. Transfer to preheated 425ºF oven and allow to roast turning carrots halfway through, until splintered and golden in color, approximately 23 – 25 minutes.
Kitchen Note: Feel free to substitute honey or agave in place of the maple syrup. Using fresh herbs, like parsley and thyme, make for a great addition right before serving.
