Fig and Blue Crostini's
When looking for a quick yet sophisticated appetizer to serve family and friends don’t overestimate the ease and beauty of a crostini! Thinly sliced figs on toasted crostini’s finished with bleu cheese is a sweet and pungent combination that when paired together, meet in perfect harmony.
Yield: 30 crostini’s
Oven: 400ºF
Preparation time: 20 minutes
Cook Time: 18 minutes
1 baguette, thinly sliced 1/4-inch thick
extra-virgin olive oil, to taste
10 figs, thinly sliced 1/4-inch thick
1/2 pound blue cheese of choice – see kitchen note
Method:
1. Preheat oven to 400ºF.
2. On a large baking sheet lined with parchment paper, add crostini’s in a single layer. Using a pastry brush, lightly coat the top of each with olive oil.
3. Place prepared crostini’s in preheated 400ºF oven and allow to toast until very light golden in color and dry to the touch, approximately 10 minutes.
4. Remove from oven and set to the side.
5. Evenly divide figs to cover and coat each with a thin slice of blue cheese.
6. Return to preheated 400ºF oven and allow to bake until cheese melts, approximately 6 minutes.
7. Remove from oven, slightly cool and enjoy while warm!
Kitchen Note: There are numerous kinds of blue cheese each ranging in levels of “pungency.” Depending on your desired “hit” choose your blue accordingly.
