Cumin Roasted Cauliflower
Out celebrating a friend’s birthday in Seattle, we ordered roasted cauliflower with cumin and several other spices, some of which I couldn’t detect. It was served with roasted pumpkin seeds and some sort of yogurt dipping sauce. I wish I could get the exact recipe to share with you, but unfortunately, they hold it close to themselves. Here is my take on a simple yet sophisticated healthy side dish to serve at your next dinner party and to “wow” those gathered around the table together.
Yield: 2 – 4 servings
Oven: 400ºF
Preparation time: 12 minutes
Cook Time: 20 minutes
1 head cauliflower (approximately 2 1/2 pounds), hard stem removed, cut into bite size florets
3 tablespoons olive oil
2 teaspoons ground cumin
kosher salt, as needed
freshly ground black pepper, as needed
Method:
1. Preheat oven to 400ºF.
2. In a medium size bowl, add cauliflower, oil and cumin. Toss with your hands until evenly incorporated.
3. Transfer to a baking sheet lined with parchment paper and spread into an even layer.
4. Place in preheated oven until golden brown, approximately 20 minutes.
5. Remove from oven and serve while hot.
Kitchen Note: Serving roasted cumin cauliflower with a drizzle of Greek yogurt on top makes a perfect creamy addition.
