Baked Yams
Baked Yams
Baked yams are a great way to get your family and friends – even the kiddos – to eat more veggies!!! And if that wasn’t enough of an excuse to make up a batch tonight, they make for excellent leftovers when mashed with butter!
Yield: 6 servings
Oven: 400ºF
Preparation time: 15 minutes
Cook Time: 1 hour + 15 minutes
6 yams, ends trimmed, long slit lengthways across the top – see kitchen method
olive oil, as needed
kosher salt, as needed
freshly ground black pepper, as needed
Method:
1. In a small baking dish lined with parchment paper, add yams. Using a pairing knife knife, make a long slit lengthways across the top of each yam. Using a fork, prick the yam all over. Generously coat each with olive oil, salt and pepper.
2. Place in preheated 400ºF oven and bake until soft when squeezed with your hands, approximately 1 hour and 15 minutes.
3. Remove from oven and allow to cool 5 minutes before serving.
4. Best served hot with butter.
Kitchen Note: Be mindful that depending on the size of yams, cooking times may vary. The same method above can also be used for sweet potatoes.
