Tuna Fish Salad
Tuna fish is a great snack and quick lunch on the go. Whether enjoyed at your desk or en-route to the gym, tuna is packed with protein and loaded with essential nutrients to keep you at your best! I prefer tuna fish simply as is with a spoon, but it’s equally as delicious sandwiched between crackers or bread. However you like it, I think you will find this protein packed snack the perfect trick to keeping you at your prime.

2, 5-ounce cans albacore tuna packed in water, drained well
1/4 cup thinly sliced scallions, approximately 4 scallions
2 tablespoons roughly chopped bread and butter pickles
1/3 cup real low-fat mayonnaise
1 teaspoon Dijon mustard
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1/2 teaspoon, kosher salt
as needed, freshly ground black pepper
Method:
1. In a medium size bowl, add tuna and using a fork, mash until no large chunks remain.
2. Add scallions, bread and butter pickles, mayo, Dijon, garlic powder, onion powder, salt, and pepper. Using a spatula, combine until evenly incorporated.
3. Adjust seasoning to taste with salt and pepper and serve with or without bread.
Kitchen Note: If you prefer additional “zip” add more Dijon. Creamier texture? Add more mayo.
