Spiced Lamb Tacos
1 tablespoon canola or vegetable oil
1 pound ground lamb
2 cloves garlic, finely minced (approximately 1 teaspoon)
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon dried oregano
1 teaspoon kosher salt
as desired, freshly ground black pepper
8 flour or corn tortillas
optional garnishes to choose from:
sour cream
crème fraiche
tzatziki, freshly made
scallions, thinly sliced
guacamole, freshly made
red onion, thinly sliced
feta cheese, crumbled
tomato, diced
Method:
1. In a large heavy bottom fry pan over medium – high heat, add oil and allow to heat, approximately 1 minute.
2. Add lamb and while occasionally stirring, allow to cook until golden brown and cooked through, approximately 6 – 8 minutes.
3. Transfer to a paper towel lined plate and allow to drain.
4. Meanwhile, over open flame or in a sauté pan, toast tortillas until just heated through and lightly colored on both sides, approximately 30 seconds – 1 minute.
5. Serve meat inside each tortilla and garnish as desired.
Kitchen Note: Given this dish is a “fusion” between Mexican and Greek style cooking, feel free to play around with your toppings. Creating a toppings bar where family and friends can customize their own is a great way to make dinnertime fun and engaging.
