Classic Tomato Pomodoro Sauce
There is nothing simpler nor satisfying than a quick weeknight Pomodoro sauce! Whether served with your pasta noodle of choice or over juicy baked chicken with fresh parmesan to finish, it’s a great go-to recipe to have in your recipe box! Make too much? Don’t fret! Freeze leftovers in small portions for an even quicker weeknight dinner next week!

1 tablespoon olive oil
1 small yellow onion, roughly chopped
1 garlic clove, minced
1, 28-ounce can crushed San Marzano tomatoes
1 tablespoon dry Italian seasoning
1 tablespoon granulated sugar
kosher salt, to taste
1 cup freshly grated Parmesan cheese, to garnish
Method:
1. In a medium size saucepan over medium heat, add oil and allow to heat, approximately 1 – 2 minutes.
2. Add onion, and allow to cook while occasionally stirring until soft, lightly caramelized and translucent, approximately 4 – 5 minutes. Add garlic, and allow to cook until just fragrant, approximately 20 seconds.
3. Add tomatoes, Italian seasoning, sugar and a pinch of salt. Reduce temperature to medium – low and allow to simmer, while occasionally stirring, until flavors have developed and consistency has slightly thickened, approximately 5 – 10 minutes. – See kitchen note.
4. Toss with your noodle of choice and finish with fresh Parmesan, if desired.
Kitchen Note: When making pasta, always reserve your cooking water to help thin your sauce if it becomes too thick or dry.
