Lemongrass Lime Granita
Come summertime when the house is loaded with summer-goers and kids, a big batch of granita makes for a quick and delicious treat when the sun is at its prime. Whether topping with a splash of vodka for adults or cooling sun-kissed lips, granita is a great base to always have at the ready.

Preparation time: 10 minutes prep + 20 minutes steeping + 5 hours in the freezer
Cook Time: 5 minutes
Simple Syrup:
1 cup water
1 cup granulated sugar
1 stalk lemongrass, bruised with a kitchen mallet
zest of 2 limes, approximately 2 tablespoons
1 tablespoon freshly grated ginger
1/2 cup fresh lime juice
1 3/4 cup water
zest of 1 lime for garnish
Method:
1. In a small saucepan over medium heat, add water, sugar, lemongrass, lime zest and ginger. While whisking, cook until the sugar has dissolved, approximately 4 minutes. Remove from heat and set to the side for 20 minutes to steep.
2. Add lime juice and water whisking to combine. Pour into a 9x13-inch baking dish and carefully place in the freezer ensuring contents are laying flat. After 1 hour, use a kitchen fork to scrape or rake the mixture so it doesn’t form into a solid block. Every hour thereafter, for a total of 4 – 5 hours, use the kitchen fork to rake the mixture until ice crystals are dry.
3. Place serving bowls, i.e. martini glasses or glass bowls, in the freezer allowing them to chill. Once cold, working quickly, divide granita among serving bowls garnishing with fresh lime zest.
Kitchen Note: Consider adding mint or other fresh herbs to your simple syrup base. Freshly sliced mint or even basil as a finishing touch adds an element of color along with the lime zest.
