Whole Roasted Garlic
I absolutely love garlic and try to incorporate it in everything I make. One of my favorite cooking methods is roasting an entire head of garlic and spreading it on my freshly made garlic bread. It’s absolutely divine and with only 2 ingredients, there really is no excuse!
Yield: 1 head of garlic
Oven: 400ºF
Preparation time: 5 minutes
Cook Time: 45 minutes
1 large head of garlic, skin on
olive oil, as needed
Method:
1. Preheat oven to 400ºF.
2. Standing the head of garlic on its side, use a sharp knife to remove the top half of the garlic. When facing the garlic upright, the top of each garlic clove should be exposed. If it isn’t, slice a little farther down.
3. Place the garlic on a large piece of foil and using your hands, generously rub the entire garlic (skin on) with olive oil. Tightly secure the entire head of garlic in foil and place on a baking sheet in the preheated 400ºF oven.
4. Allow to roast until there is a give to the touch and garlic is soft, approximately 45 minutes.
5. Remove from oven and allow to cool until cool enough to handle.
6. When ready, use your hands to squeeze the side releasing each clove. Spread as desired while hot.
Kitchen Note: Roasted garlic is great on garlic bread, crostini’s or used in a quick tomato sauce or spread.
