Roasted Corn on the Cobb

When I lived in Columbus, Ohio juicy sweet corn grew in abundance come summertime. Because of this, I found myself incorporating it in my weekly menu rotation more often than not! Whether tossed raw in my salad, pickled or grilled, I couldn’t get enough of it! One of my all-time favorite ways to enjoy corn, straight from the corn with melted butter, was quite possibly the simplest, also yielding in the juiciest corn you could ever imagine! This recipe is inspired by countless evenings spent around the grill enjoying sweet milky corn!

Yield: 4 servings

Grill: Medium – High heat

Preparation time: 10 minutes

Cook Time: 10 minutes

4 ears of corn, husk pulled down but intact, hairy fibers removed

3 tablespoon melted butter

Method:

1.   On a plate, generously coat each cobb with melted butter to evenly coat.

2.   On the BBQ or a grill pan over medium – high heat, add corn directly over the grates allowing the husk to hang over the side as to not make direct contact with the flames. Grill until grill marks appear and corn is golden in color, approximately 2 minutes. Using the husk as a handle, rotate the corn allowing the second side to also char, approximately 2 more minutes. Continue this process until all sides are golden in color, approximately 10 minutes in total.

3.   Remove from heat, remove the husk and serve while hot!

 

 

Kitchen Note:  To take it up a notch, consider adding spices to your melted butter, like cayenne, garlic powder, onion powder, or even curry powder.
