Roasted Brussels Sprouts with Balsamic Maple Glaze
If you don’t like Brussels sprouts, this recipe may change your mind! Between the sweetness of the maple syrup and “bite” from the vinegar, it’s heavenly!
Yield: 4 – 6 servings

Preparation time: 15 minutes
Cook Time: 20 minutes
2 pounds Brussels sprouts, tough ends trimmed, halved
2 tablespoons olive oil
1 tablespoon pure maple syrup
1 tablespoon balsamic vinegar
1 teaspoon kosher salt
freshly ground black pepper, as desired
Method:
1. Preheat oven to 400ºF.
2. In a large bowl, add prepared Brussels sprouts, olive oil, maple syrup, balsamic vinegar, salt, and black pepper. Using clean dry hands, or a wooden spoon, toss to evenly coat.
3. On a baking sheet lined with parchment paper, add Brussels sprouts and spread into an even layer.
4. Place in preheated 400ºF oven for 10 minutes. Using a metal spatula or wooden spoon, flip sprouts over to ensure both sides evenly caramelize.
5. Return to oven and cook until fully caramelized and almost syrupy in appearance, approximately 10 – 12 minutes.
6. Remove from oven and serve while hot.
Kitchen Note: Consider using different types of oils in place of the olive oil. Coconut oil, for instance, would pair beautifully with the maple syrup. Also, using pancetta is a wonderful addition.
