Tomato Leek Vinaigrette
There is something truly special about fresh tomatoes and leeks blended together into a delicious and simple vinaigrette! And best of all, it makes for a great marinade so save yourself a step and marinade your chicken or shrimp before tossing your greens!

1 leek, roughly chopped (approximately 1 1/2 cups)
2 Roma tomatoes, roughly chopped (approximately 2 cups)
1 teaspoon dried oregano
2 tablespoons olive oil
2 tablespoons sherry vinegar
kosher salt, as desired
freshly ground black pepper, as desired
Method:
1. In a blender, like Vitamix, add leeks, tomatoes, olive oil, sherry vinegar, salt, and pepper. Process until smooth adjusting seasoning to taste with additional vinegar, salt, or pepper as desired.
2. Toss with your favorite salad greens and enjoy!
Kitchen Note: Vinaigrette is best kept in the refrigerator for up to 4 days.
