Tahini Lemon Dressing
One of my favorite restaurants in Seattle serves a salad where they toss kale with a freshly made tahini lemon dressing. I tried getting their recipe, but to no avail. After a few quick attempts to recreate a similar version, I did just that and am pleased to say, I like it just as much (if not more) than theirs!

1/4 cup tahini – see kitchen note
2 garlic cloves, minced (approximately 2 teaspoons)
2 tablespoons honey
2 tablespoons lemon juice (approximately juice from 1 lemon)
1 cup olive oil, best quality possible
kosher salt, as desired
Method:
1. In a large mason jar, add tahini, garlic, honey, lemon juice, olive oil, and a large pinch of salt. Secure the lid and shake until emulsified.
2. Alternatively add tahini, garlic, honey, lemon juice, and salt to a medium size bowl. Slowly and gradually add the oil while whisking until emulsified.
Kitchen Note: Tahini is sesame seed paste and can be found at any major grocery store, usually in the international section. Use more or less sweetness and olive oil depending on desired flavor.
