Strawberry Vinaigrette
When strawberries are prime for picking, pureeing them into a quick and delicious vinaigrette is a sure way to maximize on their sweetness. Plus, it helps even the pickiest of eaters eat more greens!

1 cup thinly sliced strawberries (approximately 8 strawberries), rinsed, stem removed
1 teaspoon dark brown sugar
1 teaspoon lime juice, from approximately 1 lime
1/4 cup vegetable or coconut oil
1 tablespoon balsamic vinegar
kosher salt, as desired
freshly ground black pepper, as desired
Method:
1. In a small food processor, add strawberries, brown sugar, lime juice, vegetable oil, balsamic vinegar, salt and pepper. Blend until smooth and resembles salad dressing. Adjust seasoning to taste with salt and pepper, toss with your favorite salad greens and enjoy.
Kitchen Note: Dressing will keep up to 5 days in the refrigerator. Note: The longer the vinaigrette sits in the fridge, the stronger the “bite” will get!
