Stone Fruit Salad with Yogurt and Pistachios
If you are looking for a light fruit based dessert this recipe is for you! Simple, delicious and healthy, it’s a perfect way to end a delicious meal on a sweet (yet light) note!

2/3 cup low fat plain yogurt
1 teaspoon honey or agave
2 ripe plums, sliced 1/2-inch thick
1 ripe peach, sliced 1/2-inch thick
2 tablespoons unsalted roasted shelled pistachios
as desired, honey to garnish
Method:
1. In a small bowl, whisk together yogurt and honey until evenly combined.
2. On a small platter or plate, add yogurt in the middle and neatly cover with fresh fruit and pistachios. Right before serving, drizzle with additional honey if desired.
Kitchen Note: Feel free to omit the nuts all together or add fresh herbs instead. Just keep in mind that adding another textural component to any salad is a great way to take it to the next level! For a less sweet version, remove the honey.
