Simple Walnut Vinaigrette
I am all for simplicity when it comes to a quick vinaigrette. This version is quite different than your standard vinegar and olive oil, with the walnut oil giving it great complexity and depth. You may want to double or triple this recipe and serve it at your next dinner party. It’s a winner, and a definite conversation starter.

4 tablespoons walnut oil, best quality possible, like La Tourangelle
2 tablespoons white balsamic vinegar, best quality possible, like Acetaia Cattani White Balsamic
kosher salt, as desired
freshly ground black pepper, as desired
Method:
1. In a mason jar with a tight fitting lid, add walnut oil, white balsamic vinegar, salt and pepper. Shake until emulsified. Adjust seasoning to taste with additional salt and pepper, if desired, and toss with your favorite salad greens.
Kitchen Note: I absolutely love walnut oil, but by all means peanut, cashew, avocado or even EVOO all make for a great alternative.
