Pepperoncini-Dijon Vinaigrette
Sometimes my creative juices start flowing and a home-version of the show Chopped takes place! This time, I had a bottle of pepperoncini’s packed in their vinegary brine. The next thing I knew, a splash of pepperoncini brine, minced pepperoncini’s, Dijon, olive oil, salt and honey were going into my mason jar followed by a quick shake to emulsify. Wow did this combination work! Whether used as a marinade or quick vinaigrette tossed with your favorite salads greens, this is one winning combination that won’t disappoint!

1/2 tablespoon Dijon mustard
3 tablespoons brine juice from the pepperoncini jar
1/2 teaspoon minced pepperoncini, plus more if desired
1/4 cup olive oil
1/2 tablespoon honey or agave
kosher salt, as desired
Method:
1. In a tight fitting mason jar, add Dijon, pepperoncini juice, pepperoncini’s, olive oil, honey or agave, and salt to taste. Secure the lid, shake until emulsified, adjust seasoning to taste and toss with you favorite salad greens.
Kitchen Note: Add more or less pepperoncini’s and sweetness to your liking.
