Peanut Vinaigrette
One of my favorite restaurants in Newport Beach is Gulfstream and this salad is why! Although they wouldn’t share the recipe, I tried my best to pick out every flavor profile as if were a sommelier trying to decipher a vintage from a fine glass of wine. Although it’s hard to compare peanut vinaigrette to a fine wine, this recipe was well worth it!

2 tablespoon roughly chopped peanuts, unsalted
1/4 cup creamy peanut butter
3 tablespoon peanut oil
1/4 cup water
1 tablespoon fresh lime juice, from half a lime
2 tablespoons rice-wine vinegar
1 teaspoon minced ginger
2 teaspoons low sodium soy sauce
2 teaspoons honey
Method:
1. In a medium size bowl, add peanuts, peanut butter, peanut oil, water, lime juice, rice-wine vinegar, ginger, soy sauce, and honey. Using a whisk, whisk until combined adding more water to “thin out” if desired.
Kitchen Note: Add more ginger if you want a little more “kick” and more or less water depending on desired thickness. In addition to leafy green salads, this vinaigrette makes for an excellent marinade with chicken!
