Lemon Vinaigrette

A simple lemon vinaigrette is in my opinion, a classic recipe that everyone should have in their repertoire.  And depending on whether you like things sweet or tart, you have all the control to make it your own.

1 small shallot, minced (approximately 1 tablespoon)

3 tablespoons freshly squeezed lemon juice, juice from approximately 1 – 2 lemons

1/2 cup extra-virgin olive oil

1 teaspoon Dijon mustard

1 teaspoon honey, agave or sugar – see kitchen note

kosher salt, as desired

freshly ground black pepper, as desired

Method:

1.   In a small bowl, use a whisk to combine shallot, lemon juice, Dijon mustard, honey, agave or sugar, salt, and pepper. Slowly and gradually, stream in the olive oil while whisking until emulsified. Alternatively, add all ingredients to a mason jar with a tight fitting lid and shake until emulsified.

2.   Toss with your favorite salads greens and serve.

 

Kitchen Note: Add more or less sugar depending on desired sweetness.
