Green Goddess Salad Dressing
For years green goddess salad dressing has held a strong reputation! From tossing with your favorite salad greens to dipping with raw veggies, it’s a classic recipe that holds numerous variations. From your creamy base of mayo, sour cream, yogurt or avocado to herbs stemming (pun intended) from tarragon, basil, chives and parsley, you can find a perfect combination for yourself. The recipe below is my personal favorite combination but by all means, play around with the ingredients until your desired outcome is reached!

1/2 cup low fat sour cream
1 teaspoon anchovy paste
1 teaspoon roughly chopped tarragon
1 teaspoon roughly chopped parsley
5 basil leaves, thinly sliced
1 tablespoon finely chopped chives
1 garlic clove, roughly chopped
kosher salt, as desired
freshly ground black pepper, as desired
1 tablespoon lemon juice, from approximately one half lemon
Method:
1. In a small food processor, add sour cream, anchovy paste, tarragon, parsley, basil, chives, garlic, salt, pepper, and lemon juice. Process until smooth and resembles the consistency of a creamy salad dressing. Adjust seasoning to taste with additional salt, pepper or lemon juice as desired.
2. Store in the refrigerator for up to 5 days keeping in mind that the flavor will intensity the longer it sits.
Kitchen Note: If you don’t care for one of the mentioned herbs, simply omit it keeping in mind you may need to add more of another herb in its place.
