Creamy Tarragon Dressing

Tarragon has been somewhat of an acquired taste for me over the years, but like fennel, I absolutely cannot get enough of it! Perfectly suited for a simple weeknight salad to a delicious grilled vegetable sandwich spread or even a perfect stand-in “dressing” for your potato salad, this recipe is a go-to that I keep coming back to time and time again!

1/2 cup light mayo

1 tablespoon lemon juice, from approximately one half lemon

2 teaspoons roughly chopped tarragon

1 garlic clove, peeled, stem end trimmed, minced

kosher salt, to taste

freshly ground black pepper, to taste

Method:

1.   In a small bowl, use a whisk to combine mayo, lemon juice, tarragon, garlic, salt, and pepper. Whisk until smooth then adjust seasoning to taste with additional salt, pepper or lemon juice if desired. – See kitchen note

2.   Toss or spread to your heart’s content!  

 

Kitchen Note: Creamy tarragon dressing will keep in an airtight container in the refrigerator for up to 3 days. Keep in mind the tarragon flavor profile will intensify the longer it sits.

For a looser consistency, consider adding a splash of water to help thin.
