Buttermilk Tarragon Dressing
Tarragon and buttermilk are one combination that simply put, make a match made in heaven. I like using low-fat buttermilk, but by all means you can opt for the full fat! The best thing about this recipe is that you can “doctor” to your desire by adding more “kick” with additional garlic or mustard. Most of all, have fun with it and toss to your hearts content!

2 tablespoons fresh lemon juice, from approximately 1 lemon
2 teaspoons stone ground mustard
1 tablespoon olive oil
1 garlic clove, minced
1 teaspoon roughly chopped fresh tarragon
1/2 teaspoon kosher salt
2 cracks black pepper
1/4 cup mayonnaise
2 tablespoons plain Greek yogurt, like 2% Fage
2 tablespoons low-fat buttermilk
2 small heads bibb lettuce – or preferred lettuce – cleaned, dried and torn into bite size pieces
Method:
1. In a small bowl, whisk together lemon juice, mustard, olive oil, garlic, tarragon, salt, pepper, mayo, yogurt, and buttermilk. Adjust seasoning to taste with additional lemon juice, garlic or salt and pepper.
2. Toss with your favorite salad greens – my favorite is bibb – and serve.
Kitchen Note: Feel free to play around with your mustards as well as herbs, like replacing tarragon for basil or mint.
