Apple Vinaigrette
As fall rounds the corner, our apple tree is weighted down with beautiful sweet apples. We aren’t quite sure what kind of apples are growing on our tree, but one thing we do know is that they are delicious in everything from apple sauce that my dad churns right on our counter, to apple cobbler, and even in salad dressings. Every time summer comes to an end its bitter sweet around here — we may lose the sunshine but sweet delectable apples await us.

1/3 cup cider vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
1 red apple (like Honey Crisp or Pink Lady), core and seeds removed, quartered
large pinch salt
small pinch freshly ground black pepper
1/2 cup extra virgin olive oil
Method:
1. In a blender, add cider, mustard, honey, apple, salt, and black pepper. Run on low until smooth, approximately 10 seconds. With the motor running on low, slowly stream in the oil until incorporated.
2. Remove from blender, adjust seasoning with salt and pepper to taste, and serve over your favorite salad greens with fresh apple slices as a garnish.
Kitchen Note: If you prefer a sweeter dressing, add more honey. A great way to garnish an apple-based salad is with store-bought, or homemade, apple chips.
