Apple Coleslaw
I love finding ways to take a classic, in this case coleslaw, to the next level! By adding fresh fruit and a super simple non-dairy vinaigrette, not only is it a healthier option, it tastes and looks incredible. Don’t be surprised if your kids love it too!

Salad:
1/2 small red cabbage, shredded
1/2 small green cabbage, shredded
2 green onions, thinly sliced
1 red apple, cored, julienned
1 green apple, cored, julienned
Dressing:
1/3 cup rice wine vinegar
1 tablespoon granulated sugar
kosher salt, as desired
freshly ground black pepper
Method:
1. In medium size bowl, add red and green cabbage, green onions, and red and green apples. Gently toss to combine.
2. In a small bowl, whisk to combine rice wine vinegar and sugar until the sugar has dissolved. Adjust with salt and pepper.
3. Toss the cabbage mixture with vinaigrette and serve.
Kitchen Note: Feel free to add more or less apples for added sweetness and color. The cabbage mixture will last up to 2 days stored in an airtight container in the refrigerator. Keep in mind that after tossing the salad with vinaigrette, it intensifies the longer it sits.
