Sweet Potato Chips
When looking for a healthy alternative to standard store bought potato chips, consider making sweet potato chips instead! Easy to make and popular among kids and adults alike, they are a great option without sacrificing on flavor or texture.
Yield: 2 – 4 servings
Oven: 500ºF
Preparation time: 10 minutes
Cook Time: 20 minutes
1 pound sweet potatoes, peeled and thinly sliced across into 1/4-inch thick coins
2 – 3 tablespoons olive oil, as needed
kosher salt, as desired
Method:
1. Preheat oven to 500ºF.
2. Line a baking sheet with parchment paper and set to the side.
3. In a large bowl, combine sweet potatoes, olive oil and salt using clean hands to toss until evenly combined. Transfer to prepared baking sheet spreading into a single and even layer.
4. Place in preheated 500ºF oven and allow to roast until golden brown in color, approximately 10 minutes. Flip and cook the second side an additional 10 minutes, or until crispy and also golden brown in color.
5. Remove from oven, immediately salt and allow to cool at room temperature until crispy.
6. Note: Keep an eye on the smaller chips as those will cook faster than the larger ones.
Kitchen Note: Consider taking it up a notch by adding a pinch of cayenne, garlic powder, or even paprika when tossing with olive oil.
