Pickled Corn Salsa
Sometimes it’s fun taking a classic and giving it a twist. This salsa is inspired by Trader Joe’s corn salsa but is taken up a notch with a little added “pizazz.” To do this, I simply pickled the corn. Now, this isn’t the standard pickling method, but I am calling it pickled because it’s as close as you can be without pickling. How is that for an answer?
Yield: 1 cup

Preparation time: 10 minutes
Cook Time: 10 minutes
2 ears of corn, kernels removed (approximately 1 cup)
1 tablespoon sugar
1/3 cup cider vinegar
red chili flakes, optional
Method:
1. In a small saucepan over medium heat, add corn, sugar, vinegar and chili flakes if using. Bring to a simmer then reduce to low and partially cover. Cook while occasionally stirring until flavors have developed and the pan is dry, approximately 8 – 10 minutes. If the pan dries too quickly, lower the heat and add a splash of water.
2. Remove from pan and either serve warm or chilled.
Kitchen Note: Pickled corn salsa is excellent as a quick no-fuss salsa or better yet, used as a finishing touch to tacos!
