Grilled Pineapple Salsa
Instead of a traditional tomato based salsa, consider grilling pineapple and tossing with a little “heat” and onion for a delicious take on the classic! You may even find the kiddos will like it.
Yield: Approximately 1 – 2 cups

Cook Time: 8 minutes
1 pineapple, peel removed, cut across into 1/2-inch thick circles (keep the core intact)
1 tablespoon lime juice, juice from 1 lime
1 small green jalapeno, minced, more or less depending on desired “heat”
1/2 red onion, minced
1/8 teaspoon cayenne pepper, more or less depending on desired “heat”
kosher salt, to taste
Method:
1. In a dry grill pan over medium – high heat, working in batches if needed, grill pineapple slices until grill marks appear, approximately 4 minutes. Flip and cook the second side until grill marks also appear, another 4 minutes.
2. Discarding the hard center core, cut the grilled pineapple into 1/2-inch cubes.
3. In a medium size bowl, toss pineapple with lime juice, jalapeno, red onion, cayenne pepper, and salt to taste.
4. Adjust with more jalapeno or cayenne if desired.
5. Serve on grilled proteins or simple as is with fresh chips for dipping.
Kitchen Note: Given the sugar content in pineapple, they should quickly brown (caramelize) so keep an eye on them.
