Grilled Peach Salsa
When peaches are juicy and ripe, I love including them in every meal, if possible! This recipe is inspired by an evening where I had beautiful pork loin chops and they needed a little “pizzaz.” With peaches on hand and a grill ready for “firing” the grilled peach salsa was born. What turned into impromptu cooking quickly turned into a delicious side that to this day, I make more often than not!

Cook Time: 6 minutes
4 firm peaches, unpeeled, pitted, cut in half
1 tablespoon vegetable oil
1 tablespoon fresh lime juice, from approximately 1 juicy lime
1/2 teaspoon roughly chopped fresh mint
1/2 jalapeno, de-seeded, finely minced, optional
Method:
1. In a large bowl, combine peaches and vegetable oil. Toss to evenly combine.
2. On a preheated grill pan or BBQ over medium heat, add peaches in a single layer with the flesh side facing down. Grill until grill marks form, approximately 3 minutes. Rotate 180º and cook another 3 minutes until grill marks form and a crosshatch has appeared.
3. Remove from grill, cut into 1/2-inch cubes and toss with lime juice, fresh mint and jalapeno, if using. Adjust to taste with more lime or mint to taste and serve on the side of any protein!
Kitchen Note: Grilled peach salsa makes for a nice touch of sweetness with any protein or spicy dish!
