Scallion Dipping Sauce and Marinade
In the summer, I love grilling steak and this sauce is one that I enjoy using as both a marinade and dip. It has a nice “bite” which pairs perfectly with red meat. Easy and delicious, that’s what I like!
Yield: 1/2 cup

2 large fresh scallions, ends trimmed and cleaned, thinly sliced (approximately 1/2 cup)
1/4 cup fish sauce
1 teaspoon sesame oil
1 garlic, finely minced (approximately 1 teaspoon)
1 small shallot, minced (approximately 1 tablespoon)
2 tablespoons rice wine vinegar
2 tablespoons toasted sesame seeds
Method:
1. In a medium size bowl, add scallions, fish sauce, sesame oil, garlic, shallot, rice wine vinegar, and toasted sesame seeds. Using a whisk, mix to combine.
2. Serve on the side of steak kabobs or use as a marinade before cooking.
Kitchen Note: If you prefer more “bite,” add more rice wine vinegar.
