Cheese Quesadilla
When it comes to quick weeknight cooking that the entire family will love, consider making cheese quesadillas! Of course your standard cheese variety can be “fancied” up with chicken, steak, shrimp or even fajita style with grilled vegetables, but who says anything’s wrong with a good ol’ classic!

Cook Time: 4 minutes
4 large flour tortillas (9 1/2-inches in diameter), best quality as possible
2 cups mozzarella cheese
1 1/2 cups crumbled Cotija cheese
cooking spray or vegetable oil
guacamole, optional garnish accompaniment
sour cream, optional accompaniment
Method:
To prepare the quesadillas:
1. On half of each tortilla, divide mozzarella and Cotija cheese. Fold over the second side to evenly align.
2. In a large skillet or griddle over medium heat, spray with cooking spray or lightly grease with vegetable oil, and allow to heat, approximately 1 minute. Add quesadillas and weigh down with a weighted press or heavy baking dish. Cook the first side until lightly golden in color, approximately 2 minutes. Flip and cook the second side until also golden in color and the cheese has melted, an additional 2 minutes.
3. Remove from pan and allow to cool 2 minutes before cutting into triangles.
4. Best served with fresh guacamole and sour cream!
Kitchen Note: If desired, add cooked chicken, steak, vegetables or even shrimp for a nice protein boost.
