Looking to add more greens to your diet? Here is an idea for you! Add fresh kale to your next morning smoothie along with fresh or frozen fruit and a splash of coconut water. Who would have thought eating – I mean drinking – more greens could be so satisfying!

2 cups baby kale
1 cup coconut water, plus more if needed
1 cup frozen pineapple – See kitchen note
1 cup frozen mango – See kitchen note
Method:
1. In a blender, add kale, coconut water, pineapple and mango. Blend until smooth adding more coconut water or ice until desired consistency is reached.
Kitchen Note: If you don’t have frozen pineapple or mango, use fresh and add ice starting with 1 cup until desired consistency is reached. If desired, add ginger for a little “spice” starting with 1/2 teaspoon minced.
