Pumpkin Smoothie
As soon as pumpkin hits the menu at Starbucks, I know Fall has hit! Even though the temperature may still hit 85ºF in Newport Beach, CA, there is something truly special about pumpkin and the nostalgic memories that are associated with it.

1/4 cup pumpkin puree
2 cups low-fat or 2% milk
2 – 4 tablespoons sweetened condensed milk, depending on desired sweetness
1 teaspoon pumpkin pie spice
2 cups ice cubes
Optional Garnish:
Fresh whipping cream
Pumpkin pie spice
Method:
1. In a blender, like my personal favorite Vitamix, add pumpkin puree, milk, condensed milk, pumpkin pie spice, and ice cubes. Blend on low then high until smooth.
2. If using, serve with whipping cream and a light dusting of pumpkin pie spice to finish.
Kitchen Note: Feel free to use more or less sweetened condensed milk depending on your desired sweetness and more or less ice depending on your preferred consistency.
