Pineapple Kale Smoothie
With 3 ingredients, this smoothie is on constant repeat in my kitchen. It’s energizing, fresh and so packed with good-for-you ingredients it’s hard to not feel good about yourself when you drink it!

1 cup frozen pineapple – see kitchen note
1 small handful baby kale, washed
1 cup coconut water
Method:
1. In a blender, add pineapple, kale and coconut water. Blend on slow then high until smooth.
Kitchen Note: If your pineapple isn’t frozen, add ice but keep in mind more liquid may be needed. I always prefer using frozen fruit, even if that means freezing fresh fruit when in peak season. This way, your smoothie will stay at its prime and won’t water down as it “melts.”
