Kale Smoothie with Apple and Ginger
The New Year brings lots of new things, including New Year Resolutions. Top of that list usually has something to do with going back to the gym, eating better or eating “cleaner.” Juicing and fresh smoothies are on the “in” and this one can help kick start the new you! If you prefer a little more “tartness” use a green apple and if you prefer a little more sweetness, add a red. Of course, smoothies are all about personal preference so use this as your base and play around with it until you reach the perfect combination. After all, there are 364 more days to consider.

2 cups (2 large leaves) torn kale, hard spine removed, torn into bite size pieces – see kitchen note
1 apple, red or green, cored and cut into large chunks
1/2 teaspoon minced fresh ginger, less or more depending on desired “kick”
1/4 cup coconut water
1 cup ice, less or more depending on desired consistency – see kitchen note
Method:
1. In a blender, like my personal favorite Vitamix, add kale, apples, ginger, coconut water, and ice. Blend until smooth adjusting consistency with more ice, if needed.
Kitchen Note: Start with less ice and work your way up depending on desired consistency. There are numerous types of kale to choose from. When selecting kale, keep in mind that the darker the leaf the more “intense” it will taste. For a milder flavor, pick a lighter shade of green.
