Coconut Oatmeal Smoothie
With countless articles and books dedicated to the health benefits of coconut, I couldn’t help but create a coconut based smoothie. That was my motivation but after the first sip, I quickly discovered the amazing health benefits weren’t the only reason I wanted to add more coconut to my diet. It’s actually really good! Cheers to a delicious smoothie that does your body good!

1 frozen banana, cut into bite size pieces
1/4 cup old-fashioned rolled oats
2 tablespoons coconut oil
1 tablespoon maple syrup
1 1/4 cup unsweetened coconut milk
1/2 cup crushed ice, more or less depending on desired consistency
Method:
1. In a blender, add banana, oats, coconut oil, maple syrup, coconut milk, and ice. Blend on low until running then high until smooth.
2. Serve immediately!
Kitchen Note: Agave or honey can be used in place of the maple syrup. If you don’t have frozen bananas add regular but up the amount of ice.
