Blueberry Mint Juice
The combination of mint with blueberries is one that not only refreshes, it replenishes. Starting my morning with a blueberry mint juice is one way to get the day started on a sweet note!

1 cup frozen blueberries
1/8 cup loosely packed mint leaves
juice from half lemon, approximately 1 tablespoon
8-ounces coconut water
Method:
1. In a blender, add blueberries, mint, lemon juice, ice, and coconut water. Blend on low speed until incorporated then high until smooth. Add more ice if a thicker consistency is desired.
Kitchen Note: For additional sweetness, consider adding a teaspoon or two of honey. If you don’t have frozen blueberries, add ice starting with 1/2 cup until desired consistency is reached. Feeling like a smoothie instead? Add ice starting with 1 cup until desired thickness.
