Avocado Pineapple Smoothie
This smoothie is a tribute to one of my all-time favorite smoothies at Evolution in University Village. All of their juices are fresh pressed utilizing the fruit at its purest form. Consider adding a combination of herbs (like cilantro, parsley, basil or mint) and a hint of lime juice for an added bonus.

1/2 avocado, pit and skin removed
1 cup frozen pineapple chunks
3/4 cup fresh cold pineapple juice
1/8 teaspoon freshly grated ginger
Method:
1 In a blender, like my personal favorite Vitamix, add avocado, pineapple, pineapple juice and ginger. Blend on low until combined then high until smooth.
2. Serve while cold!
Kitchen Note: Add more pineapple juice or ginger to desired consistency and flavor profile. Feel free to add ice starting with 1/4 cup.
