Quinoa Breakfast Porridge
With all the varieties of breakfast porridges out there, I couldn’t help but include a version with quinoa. I was tentative at first but soon discovered that it is absolutely delicious, healthy and packed with nutrients. I also find that after a bowl in the morning, I am satisfied all day long.

Preparation time: 5 minutes
Cook Time: 40 – 45 minutes
1 cup quinoa
2 1/4 cups 1% milk, plus more if desired – see kitchen note
Optional garnishes:
chopped almonds
raisins
shredded coconut
fresh fruit, like bananas and blueberries
Method:
1. In a small pot fitted with a lid, add milk and quinoa. Over medium heat, bring to a boil while occasionally stirring. Reduce to low, cover and allow to simmer until quinoa is fully cooked and tender, approximately 40 – 45 minutes. If a thinner consistency is desired add more milk.
Kitchen Note: Feel free to use almond milk or fuller fat milk in place of the 1%.
