Baked Eggs
When it comes to breakfast, sometimes, less is more! Simple baked eggs with a light dusting of freshly grated parmesan, pinch of salt and crack of pepper is one way to start your day with a bang!
Yield: 4 eggs
Oven: 350ºF
Preparation time: 5 minutes
Cook Time: 10 minute
4 large eggs
freshly grated parmesan cheese, as desired
kosher salt, as desired
freshly ground black pepper, as desired
Method:
1. Preheat oven to 350ºF.
2. Lightly butter or spray 4 ramekins or silicone muffin tin cups. In a small bowl, gently crack 1 egg keeping the yolk intact. Transfer to prepared ramekin or muffin cup and repeat with the remaining eggs.
3. Transfer to preheated 350ºF oven and allow to bake until the whites are set and yolks reach desired firmness, approximately 10 – 12 minutes for medium – well.
4. Serve in ramekins with freshly grated parmesan, a crack of pepper and pinch of salt, or invert from muffin tins to a plate and enjoy while hot!
Kitchen Note: Feel free to add fresh herbs for a tasty addition. Making a batch of baked eggs on the weekend is a great way to help out with a quick breakfast on-the-go throughout the week. Simply nuke in the micro and sandwich between toasted English muffins and a slice of American cheese. Or, snack as is for a quick protein boost.
