Avocado Toast
When I was in Australia for work I remember seeing toast with smashed avocado on nearly every breakfast menu. It took me a moment to think about that concept, but after trying it once, I began ordering avocado toast every morning. It gave me such energy without weighing me down. Just what I needed with a full day on set!

1 avocado, pit removed, mashed with a fork
as needed, kosher salt
half lime, juice to taste (optional)
2 slices toast, toasted (English muffin, wheat, white, etc.)
Method:
1. In a small bowl, use a fork to combine mashed avocado, salt and lime juice, if using.
2. Evenly divide avocado mixture on two pieces of toasted bread and finish with a small pinch of salt, if desired.
3. Enjoy while the toast is still warm and the avocado bright green.
Kitchen Note: Feel free to use a finishing salt, like Maldon, right before serving. Keep in mind avocado turns brown the longer it sits so this is best made right before serving. Lime juice gives the avocado a lovely brightness so use as much or as little as desired.
